As a yoga instructor, my journey to Nepal was not only a pilgrimage to the heart of spiritual awakening but also an adventure for the senses, especially the palate. The crisp air of the snow-covered mountains invigorated my spirit as I made my way to Gorkha, a place steeped in history and the birthplace of the unifier of Nepal, Prithvi Narayan Shah. Here, amidst ancient palaces, I savored the local fry tofu, a dish that mirrored the resilience and simplicity of the Nepalese people.

The next leg of my journey brought me to the serene Tsho Rolpa lake, a hidden gem nestled in the Rolwaling Valley. As I practiced asanas on its banks, the tranquility of the place seeped into my being. Meals here were communal affairs, with fish curry that carried the warmth of the community and the freshness of the Himalayan rivers. Each bite was a reminder of the interconnectedness of nature and humanity.

In the evenings, the local bazaar was a festival of flavors where I discovered cheesy pistachio lush, a dessert that was a harmonious blend of the East and the West. This creamy delight, with its roots in the trade routes that passed through Nepal, was a testament to the country’s rich cultural tapestry.
